Kazakhstan is one of the few countries where both horse and camel breeding are well developed. Yet their milk is rarely processed, spoils quickly, and is not exported. This article explores how freeze-drying, craft processing, and access to the Chinese and UAE markets are helping to address the issue. And what it will take to turn ethnic milk into a national gastro brand?
